In 2016, Hussein Ahmed left his hometown of Daraa, Syria, with his family and four brothers, seeking a fresh start in the United States. Like many immigrants, they arrived with limited resources but a strong determination to build a better future. Their first step into America’s workforce was humble yet strategic: for two years, they worked on ice cream carts, learning the market, understanding customer behavior, and adapting to their new environment.

By 2018, Hussein and his brothers saw an opportunity in El Cajon, California, a city known for its large and vibrant Arab community, particularly Syrians, Iraqis, Palestinians, and Lebanese. Recognizing the lack of authentic Syrian restaurants, they decided to open Mal Al-Sham, the city’s first dedicated Syrian restaurant.

Despite having no prior experience in the restaurant business, the brothers poured their energy into recreating the flavors of home. Mal Al-Sham quickly became known for its authentic shawarma, grilled kebabs, Iraqi-style qoozi, traditional pastries, and home-cooked Syrian dishes. Customers praised not only the food but also the warmth of the service, which reminded many immigrants of family hospitality back home.

When asked about the secret behind their famous Syrian shawarma, Hussein explained that it lies in the careful blend of spices and slow roasting techniques that preserve authenticity while appealing to diverse American tastes.

The restaurant’s rapid success can be credited to both its culinary excellence and the strong Arab community in El Cajon, which welcomed the brothers’ efforts with enthusiasm. Arab families from across the region—whether from Syria, Iraq, Palestine, or Lebanon—made Mal Al-Sham a cultural hub where food and tradition came together.

Building on this success, Hussein announced that Mal Al-Sham will soon open a second location in Anaheim, near Los Angeles. This expansion reflects not only the growth of the business but also the increasing demand for authentic Arab food in areas with strong Middle Eastern communities.
